Low-Carb Pizza With Cauliflower Base

 

- Cut the core out of cauliflower head and break in to florets

- Chuck in to boiling water, add a pinch of salt and leave for 5-10 minutes

- Add cooked cauliflower to blender and blend

- Spoon mixture in to a bowl

- Crush 2 cloves of garlic, add pepper and 1/4 cup of flour to mixture

- Add 100g low fat, grated mozzarella

- Add 30g Parmesan

- Add 2 eggs to mixture

- Mix together

- Spread mix in to a pizza shape

 

(Make sure there's no air gaps and edges are neat to limit breakage after cooking)

 

- Cook at 180 degrees for 20 minutes

- Remove from oven and spread passata, cheese and your choice of toppings

- Drizzle with olive oil

- Place back in oven at 220 degrees until cheese bubbles (5 minutes)

-Remove from oven & cut in to 8 pieces

- Enjoy! :)
